LAND x PLOT, Guatemala 70% Dark Chocolate
This project has been under wraps and in development for some time now. We teamed up with our favourite bean to bar chocolate producer for a really special bar. LAND are based in Bethnal Green and Phil and his team create some amazing bars that are truly representative of the provenance of their cacao and the attention to detail they apply to each stage of their production is evident in the quality of the finished product.
From the outset, neither of us wanted to create just another coffee flavoured bar, but rather create something which really combined some of the nuances of carefully processed coffee with high quality cacao from the same origin.
The coffee we chose was the last of one of last season's best sellers and was produced by the Perez family on their farm La Senda in Acatenango, Guatemala. They have made quite a name for themselves by producing some really high quality experimental micro-lots each year and we have been lucky enough to share a few with you. This lot was processed using a "hydro-natural" technique where the whole cherries were dried and then carefully rehydrated to a target moisture content before being dried again. The result was incredibly fruit forward and very clean and some of those berry flavours really come through in the chocolate.
